For the Jambalaya Base:
Heat olive oil in a big Dutch oven or heavy pot over medium-high heat. Add the pieces of chicken and slices of sausage, searing them until they are nicely golden brown. Take out of the pot and set aside.
In the same pan, put in the onions, bell peppers, and celery (which is called the Holy Trinity of Cajun cooking). Sauté for approximately 5 minutes, stirring constantly, until the vegetables become soft. Add the garlic and cook for an additional 30 seconds until it’s aromatic.
Add in the diced tomatoes, together with the paprika, thyme, oregano, cayenne pepper, salt, and black pepper. Allow the flavors to blend together for around 2 minutes.
Add back the chicken and sausage. Stir in the rice and allow it to soak up some of the flavors. Add in the chicken broth, add the bay leaves, and allow the mixture to come to a gentle boil.
Lower heat, cover the pot, and simmer for 25-30 minutes. Don’t stir too often to avoid mushy rice. Monitor occasionally to check there’s still liquid enough.
Once the rice is cooked and has absorbed the liquid, take out the bay leaves. Add the hot sauce (if used) and sprinkle with green onions and parsley.
